A gastronomic Vinho Verde from old vines, with jasmine, citrus and subtle herbal notes, vibrant acidity and a mineral, elegant finish. Partial barrel fermentation adds texture and complexity without compromising freshness.
Tasting notes
Appearance: Bright straw yellow with youthful greenish reflections.
Nose: Elegant and initially restrained, gradually revealing jasmine, lemon balm and fresh citrus, alongside subtle herbal nuances. The aromatic profile is more sophisticated and less overtly fruity than a conventional Vinho Verde.
Palate: Dry, structured and energetic. Citrus fruit and latent minerality dominate, supported by firm, refreshing acidity. The small proportion fermented in barrel contributes texture and breadth rather than obvious oakiness. The finish is long, enveloping and elegant.
Style: This is a serious, gastronomic interpretation of Vinho Verde rather than the light, simple style often associated with the appellation. The combination of old vines, granitic soils, restrained winemaking and partial barrel fermentation gives Singular considerable depth and ageing potential.
Food pairing
The combination of acidity, structure and restrained oak makes Singular particularly versatile at the table. I would pair it with grilled sea bass • turbot • cod • scallops • lobster • octopus • seafood rice • poultry • creamy risotto • vegetable dishes • soft and semi-mature cheeses.
It should work particularly well with richer fish preparations where a simpler Vinho Verde would lack sufficient body.
Positioning
Within the Quinta de Santa Teresa range, I would position Singular as one of the more complex and gastronomic whites. It isn't primarily about exuberant fruit; the appeal is the interplay between acidity, structure, minerality, old-vine concentration and subtle oak influence.
